The ultimate chocolate cake recipe...

I'm on a mission to find the absolute best chocolate cake recipe, you know the one that everyone heads to first at the village cake stall, the one that earns you cult status at kids parties, without you having to resort to bringing out Colin the Caterpillar. (Which I've done, lots of times). I've cracked lemon sponge, I do a mean rocky road, but my chocolate cakes have always been a bit underwhelming.  So I've made it my mission to find the ultimate chocolate cake recipe that can become my go-to.

So I'm working through my recipe books, starting with Mary Berry, of course, because she's the queen of cake, but there's a few Nigellas and Delias to try in there too.  This was my first attempt, i had to slightly tweak the recipe because i didn't have everything I needed, but that's the norm for me, I never quite follow the rules!  It was really easy to make and tasted pretty good I think, not too sickly but light and yet beautifully indulgent! The kids both gave it a solid 10/10. 

 But i'm not stopping there, I think the icing could definitely be better, it's a warm day but it was still a bit soft, more of a dessert than a cake I reckon - a fork was definitely required and no-one wants to hand out forks at a kids birthday party. It would be perfect at the end of a dinner party though, with a little bit of cream and an espresso.

Death by Chocolate Cake
from Mary Berry's Baking Bible
(my version)
 
275g plain flour
3 level tbsp cocoa powder
1.5 level tsp bicarb of soda
1.5 level tsp baking powder
215g caster sugar
3 tbsp golden syrup
3 large eggs, beaten
225ml sunflower oil (I used 50ml sunflower, 175ml veg oil)
225ml milk
 
FOR THE ICING
450g plain chocolate (I used a mix of milk and plain)
200g unsalted butter
 
  1. Preheat oven to 140 C. Grease two 20cm loose bottom cake tins and line the bases with baking parchment.

  2. Add the dry ingredients to a bowl, make a well in the middle and add the wet ingredients, then beat well with a wooden spoon.  I used a kitchenaid mixer for this.

  3. Pour into tins and bake for 35 mins.  One of my tins leaked a little so a well placed tray on the shelf below is recommended!

  4. Leave to cool in the tins for a couple of mins, then remove from tins and cool completely on a wire rack, before cutting each cake in half horizontally.

  5. To make the icing, melt the chocolate in a bain marie, or in the microwave if like me you like to live life on the edge.  Remove from heat and add the butter, leave it to melt completely into the chocolate and stir well.

  6. Sandwich the cake layers together by pouring the icing onto each cake, then cover the outside completely.  Leave to set, then enjoy!
